What is ceviche?+
Ceviche is Peru’s national dish — fresh raw fish cured in citrus juice (typically lime), which gently ‘cooks’ the fish through acid. At CVCHÉ, we cut our fish to order and cure it in-house with fresh lime juice, aji peppers, red onion, and cilantro. The result is bright, refreshing, and packed with protein — our ceviches average 30-38 grams of protein per serving.
Is the fish in your ceviche raw?+
Technically, the fish starts raw but is ‘cooked’ by the acid in fresh lime juice — a process called denaturation that firms the protein the same way heat does. The result is tender, opaque fish with a clean citrus flavor. We source fresh fish daily and prepare every order to order, never pre-made.
What is leche de tigre?+
Leche de tigre (tiger’s milk) is the citrus-based marinade left over from making ceviche — a concentrated mix of lime juice, fish juices, aji peppers, and aromatics. In Peru, it’s traditionally served as a shot and is famous as both a hangover cure and an aphrodisiac. At CVCHÉ, every ceviche comes bathed in its own leche de tigre.
Is Peruvian food high in protein?+
Yes — Peruvian cuisine is naturally protein-rich. Our ceviches deliver 30-38g of protein per serving from fresh fish and seafood. Lomo Saltado packs 44g of protein from beef sirloin, and our Chicken Saltado has 40g. Even our anticucho skewers provide 30-38g of protein. CVCHÉ’s menu averages over 34 grams of protein per dish, making it one of the highest-protein restaurant options in Houston.

CVCHÉ is located inside The Conservatory food hall at 5353 W Alabama St, Suite 100-10, Houston, TX 77056 — in the Galleria area near the intersection of West Alabama and Rice Ave. We’re open every day from 11 AM to 10 PM.
Do you accept cash?+
CVCHÉ is a cashless restaurant — we accept all major credit cards, debit cards, Apple Pay, and Google Pay. This allows us to serve you faster and keep our focus on preparing your food fresh to order.
Can I order online for pickup or delivery?+
Yes! You can order online through our Toast ordering system at order.cvche.kitchen for pickup. We’re also available on major delivery platforms. For the freshest experience, we recommend pickup — our ceviches are best enjoyed within minutes of preparation.
Do you cater events?+

What are your most popular dishes?+
Our top sellers are the Ceviche Mixto (a bold mix of fish, shrimp, and calamari), Lomo Saltado (Peru’s iconic wok-fired beef with rice and fries), and the Ceviche 713 — our signature Houston creation with sashimi-grade tuna on aji amarillo cream. Do you have vegetarian or gluten-free options?+
Yes. Our Yuca a la Huancaina is vegetarian and gluten-free. Several ceviches and causas are naturally gluten-free. We’re happy to accommodate dietary needs — just ask our team when ordering and we’ll guide you to the best options.

Is your ceviche gluten-free?+
Yes. Our ceviches are naturally gluten-free — built on fresh fish, lime juice, aji peppers, red onion, and cilantro, with no wheat. Tiradito 713 and both causas are gluten-free too. We prep every order to order, so tell our team about a celiac allergy and we'll take extra care.
What is the highest-protein dish at CVCHÉ?+
Lomo Saltado leads at 44 grams of protein, followed by Chicken Saltado at 40g and Chicken Chaufa at 38g. Among ceviches, the Ceviche Clásico delivers 38g. Across the menu we average more than 34 grams of protein per dish — genuinely food that fuels you.
Do you have vegetarian options?+
Yes. Yuca a la Huancaína is vegetarian and gluten-free — fried cassava in a creamy yellow-pepper sauce — and our Tequeños are filled with melted cheese. Add sides like rice, fries, or plantain chips. We're a seafood- and meat-forward Peruvian kitchen, so vegetarian options are limited but available — just ask.
Is your food keto-friendly or low-carb?+
Our ceviches are the move. Ceviche Shrimp is about 240 calories with 12g carbs and 34g protein; Ceviche Clásico runs 280 calories, 14g carbs, and 38g protein. Skip the rice and potato sides and build a meal around ceviche or anticucho skewers for high protein and low carbs.
Are you located in a food hall?+
Yes — CVCHÉ is a counter inside The Conservatory, a food hall at 5353 W Alabama St in the Galleria/Uptown area. You order at our stall and enjoy it in the hall's shared seating. It's a quick, casual setup, perfect for a Galleria lunch or a relaxed dinner.
Do you offer delivery in Houston?+
Yes. We deliver across the Houston area through courier delivery on our own site at order.cvche.kitchen, and we're on major delivery platforms too. Ordering direct supports the kitchen and earns loyalty points. For ceviche specifically, we recommend pickup — it's brightest within minutes of being made.
What's the difference between Peruvian and Mexican ceviche?+
Peruvian ceviche is cured fast — minutes in fresh lime — and served with its leche de tigre marinade, red onion, cancha corn, choclo, and sweet potato. How do you pronounce CVCHÉ?+
CVCHÉ is pronounced like 'ceviche' — seh-VEE-cheh. The name is a modern, stylized take on the dish that defines us. As we like to say, it starts with a lime and ends with a smile.
Do you take reservations?+
We're a fast-casual food-hall counter, so no reservation is needed — just come by during open hours and order at the stall. For private events, large groups, or catering, reach out through our catering page or email info@cvche.kitchen and we'll plan it with you.
What's the price range at CVCHÉ?+

How far in advance should I book catering?+
